Agen prunes are among the best of all fibre-rich foods (see
comparative table on fibre contents).
Fibres are in roughly equal proportions, with :
- 40 - 50 % soluble fibres :
These have a high water retention capacity and a gentle,
beneficial effect on digestion as well as on various metabolic
processes, for example by reducing the glycaemic response
to the ingestion of "fast" sugars and by lowering
cholesterol levels
- 50 - 60 % insoluble fibres :
these supplement the action of soluble fibres by "mechanically"
accelerating and stimulating the digestive process.
