Plum growers prune their trees in winter. About 100 hours of labour per hectare are required for this vital operation, which, both for formative and production purposes, requires the greatest care.

Formative pruning is a fundamental and difficult task which is carried out after six years of growth to prepare the tree for production.

Pruning for fructification involves reducing the volume of the tree crown in order to :
- shape the tree and eliminate unproductive shoots,
- let sunlight into the crown to help the fruit ripen and stay healthy
- reduce the number of fruit to ensure better yields and high-quality production of large, evenly-sized fruit
- facilitate treatments and increase their effectiveness.
