After drying, the sorting operation is most important since this is when spoilt, damaged, spotted or imperfectly dried fruit are eliminated. Sorting is usually done by hand, either on a sorting belt or on the drying trays themselves before storage.

The prunes are stored on the farm in wooden box pallets until they are sold to the handlers or packers who deal with marketing operations. The pallets are covered in large food-quality polythene sheeting and placed in appropriate storage premises, preferably in the dark, at constant temperature and humidity.
