Storage
One they are dried, the prunes have to be stored for sale throughout the year. The storage premises need to be isothermal (6 °C and 70 % humidity) and dark, to prevent mould formation, dust deposits and attacks by predators. The maximum moisture content should be 23 %. The prunes are stored in wooden box pallets that allow air to circulate.
