- 5/6 apples
- 12 Agen prunes
- 2 large oranges
- 1 vanilla bean
- juice of ½ a lemon
- a little ginger
- 1 tablespoon of crème fraiche
- Soak the prunes in warm water or tea for 15 minutes.
Peel the apples, dice them and cook with a glass of water, the vanilla pod and the lemon juice. The apples will become soft (10 minutes).
Chop the prunes into small pieces and add them to the apples once they have softened.
Blend the apples and prunes until smooth.
Next, gently incorporate the cream and a little orange zest and juice.
2. Plating: In a sundae glass, add the cream topped with zest and a biscuit.
