Agen prune custard with orange zest

Ingredients :
- 5/6 apples
- 12 Agen prunes
- 2 large oranges
- 1 vanilla bean
- juice of ½ a lemon
- a little ginger
- 1 tablespoon of crème fraiche
Preparation
1. Preparation:
- Soak the prunes in warm water or tea for 15 minutes.
– Peel the apples, dice them and cook with a glass of water, the vanilla pod and the lemon juice. The apples will become soft (10 minutes).
– Chop the prunes into small pieces and add them to the apples once they have softened.
– Blend the apples and prunes until smooth.
– Next, gently incorporate the cream and a little orange zest and juice.

2. Plating: In a sundae glass, add the cream topped with zest and a biscuit.
– And to gild the lily, you can serve it with a piece of dark chocolate!
