Agenais omelette

Ingredients :
6 eggs
½ teaspoon of table salt
50g of butter
250g of “medium” Agen prunes
60g of caster sugar
Preparation
Soak the prunes in the tea. Drain them and cook them gently in 20g of butter. Break the eggs into a bowl, add the salt and half a teaspoon of sugar. Gently melt 30g of butter in a frying pan. Beat the eggs with a fork. Pour into the pan, stirring gently to ensure that it cooks evenly? Spread the prunes over the surface of the omelette. Sprinkle with some of the sugar. Fold the omelette over and sprinkle with the remaining sugar. Flambé the omelette by pouring over hot rum or brandy.
