Apple and prune pie

Ingredients :
250g of whole or pitted prunes
2 cooking apples, peeled and quartered
2 tablespoons of runny honey
2 teaspoons of cinnamon
1 orange, juiced and zested
250g ready-made puff pastry
50g of butter
icing sugar
crème fraiche
Preparation
Roughly chop the prunes and the apples. Cook down very gently with the honey, the cinnamon and the orange juice. Remove from the heat once the apples are soft. Roll out two sheets of pastry and grease a large tart tin. Line the tin with the first sheet. Pour the mixture into the pastry and add a pinch of lemon zest. Bake the second sheet in the oven for a few minutes until golden, then place on top of the apple mixture. Bake the pie for 15 to 20 minutes at gas mark 6/7 until it is golden brown. Once cooked, dust with icing sugar and remove from the tin. Serve hot, with cream.
