Beef stew with prunes

Ingredients :
700g of lean stewing beef, cut into pieces
2 shallots, halved
3 tablespoons of olive oil
4 slices of rindless bacon, chopped
2 crushed garlic cloves
2 tablespoons of flour
2 glasses of red wine
½ a litre of beef stock
1 tablespoon of tomato purée
150g prunes, with or without stones
100g button mushrooms, halved
1 bouquet garni, salt, pepper, fresh herbs
Preparation
Sear the pieces of beef in hot oil until they’re nicely browned. Add the shallots, bacon, garlic, wine, stock, tomato purée, herbs and season. Bring to the boil, stirring constantly, then cover. Simmer gently for an hour and a half. Add the prunes and the mushrooms, and cook for a further 30 minutes. Remove the bouquet garni and decorate with herbs.
