Ente Spritzer

Recipe from Fabrice Palazzi - LP François Camel (09)

Ingredients :
1 lemon + 4 slices
8 prunes + 2 for decoration
3 teaspoons of sugar
2 teaspoons of Pulco lemon
Sparkling water such as Perrier
Purée the prunes in a blender.
Add the lemon juice, the sugar and the Pulco lemon.
Shake the mixture in a cocktail shaker.
Serve in Martini glasses, topping up with Perrier.
Decorate with prunes and lemon slices.
