Gascony pears

Ingredients :
250g of “giant” prunes
300ml of water,
200ml of wine
6 medium Williams pears
100g of caster sugar
1 sachet of vanilla sugar
juice of 1/2 lemon
150g of baking chocolate
Preparation
Wash the prunes and put them in a glass casserole dish with 200ml of water, 200ml of wine and a tablespoon of sugar. Cover. Cook for 5 minutes (medium power) in the microwave to rehydrate the prunes. Remove the lid and cook for a further 5 minutes. Leave to cool. Peel the pears and core them, but keeping them in one piece. In a casserole dish, add 100ml of water, 100g of sugar and the juice of half a lemon. Boil vigorously for 3 minutes on full power. Add the pears and cover. Cook for 5 minutes on full power, then turn the pears over. Remove the lid, and cook for a further 5 to 8 minutes. Leave to cool. Serve each person a pear and some prunes, with a little of the syrup. Glaze with melted chocolate or top with chocolate curls. NB: You can also serve with crisp biscuits, such as brandy snaps.
