Monkfish skewers with prunes

Ingredients :
500g of monkfish
500g of “large” prunes
200g of olives stuffed with pimento
Olive oil, salt, pepper
Thyme, basil, tarragon
Preparation
Macerate the diced monkfish in olive oil with the herbs and spices and the salt and pepper for 1 hour. Knead the prunes with your fingers to pit them. Thread alternating pieces of prune, monkfish and olive onto the skewers. Cook for 5 to 8 minutes on each side. Suggestion: you can serve the skewers with rice, couscous, ratatouille or baked potatoes. You can also serve them with a sauce: melted butter, spice-infused oil, mayonnaise, tartare sauce, cream and herb sauce (chives, parsley, tarragon, chervil).
