Prune marmalade

Ingredients :
1kg of pitted prunes
1 large orange
1 litre of water
1kg of sugar
1 mint leaf for decoration
Remove the zest from the orange and blanch it three times. Make a syrup with the sugar and water. Pour the hot syrup over the orange peel and leave to candy, uncovered, for 2 days. Cook the prunes with 500g of sugar, add a little water and simmer, stirring frequently with a wooden spoon, for around an hour. Pour into a bowl, sprinkle with the orange zest and decorate with a mint leaf.
