4 organic bagels
8 Agen prunes
125g of cream cheese
1 splash of olive oil the zest of ½ a lime
40g of lambs leaf lettuce
For the marinade:
1 small red onion
A few crushed pink peppercorns dill
4 slices of organic smoked salmon
- Slice the salmon into fairly wide strips and place them on a plate. Sprinkle with a teaspoon of dill, a few crushed pink peppercorns and red onion rings. Cover with cling film and chill for an hour.
Mix the cream cheese with the lime zest, the olive oil, the salt and the pepper. Cut the bagels in half, then grill them for a few minutes.
Using a spatula or a knife, spread the cream cheese mixture onto the bagels. Place a few slices of avocado on the cream cheese, then cover with the marinated smoked salmon, a little lambs lettuce, a few red onion rings and some chopped prunes.
