Salmon stuffed with prunes

Ingredients :
600g of salmon fillet in one thick piece
15g of butter
200g of onions (red, if possible)
80g of salted peanuts
350g of prunes
150ml of dry white wine
1 tablespoon of oil
2 lemons
salt, pepper, chives
1 tablespoon of red lumpfish roe
Preheat the oven to gas mark 7 (210°C). Wash and dry the salmon, and cut it in half horizontally. Roughly chop the peanuts. Pit and chop the prunes. Finely chop the onions and sweat them down in a little butter. Cover with 100ml of wine. Cover and simmer gently for 5 to 6 minutes, stirring occasionally. Add the peanuts. Finely slice the lemon and lay the slices in an ovenproof dish. Place a slice of salmon on top. Season, and spread with the prune mixture. Cover with the second slice of salmon, and season. Brush with oil. Pour over the remaining wine and 50ml, and bake for 10 minutes. Serve topped with lumpfish roe and chopped chives.
