Tri-colour prunes

Ingredients :
1 jar of green olives
1 can of red peppers
16 “giant” Agen prunes
Parsley
Preparation
Blanch the green olives to remove the excess salt and stuff them with the pieces of pepper. Pit the prunes and stuff them with the filled olives. Serve the prunes on a cocktail stick and decorate the platter with red pepper and a parsley leaf.
