Winter prune salad

Ingredients :
2 large endives
4 “medium” Agen prunes
1 lemon
A small piece of blue cheese (Causses, Auvergne)
1 tablespoon of vinegar
3 spoons of oil
1 pinch of salt and pepper
Wash and chop the endives. Cut the avocado into 8, peel and toss with lemon juice. Keep 4 pieces back and dice the rest. In the bottom of a salad bowl, add the cheese and mix with the oil. Add the vinegar and season lightly. Add the endives and the avocado. Mix well and form a dome. Decorate with the four pieces of avocado facing the centre and the washed and pitted prunes.
