Agen prunes in red wine, with an Armagnac ice cream

Ingredients :
- 500g of Agen prunes, pitted

- 1 bottle of red wine from Lot & Garonne

- Prune, Armagnac or vanilla ice cream

- Cinnamon, nutmeg

- honey

- Flaked almonds.
Preparation
1. Preparation:

In a saucepan, cook the Agen prunes gently in the red wine (be generous with the wine).

– While it’s cooking, add the cinnamon, a touch of nutmeg and 3 tablespoons of honey.

– Simmer very gently for around 40 minutes.

– Leave to cool.



2. Plating:

In a sundae glass, plate up a big scoop of ice cream and a few warm prunes.

– Sprinkle over a few flaked almonds and serve before the ice cream melts!
