Salmon and lime bagels with Agen prunes

Ingredients :
4 organic bagels

8 Agen prunes

125g of cream cheese

1 splash of olive oil the zest of ½ a lime

2 avocados

40g of lamb’s leaf lettuce

For the marinade:

1 small red onion

A few crushed pink peppercorns dill

4 slices of organic smoked salmon
- Slice the salmon into fairly wide strips and place them on a plate. Sprinkle with a teaspoon of dill, a few crushed pink peppercorns and red onion rings. Cover with cling film and chill for an hour.

– Mix the cream cheese with the lime zest, the olive oil, the salt and the pepper. – Cut the bagels in half, then grill them for a few minutes.

– Using a spatula or a knife, spread the cream cheese mixture onto the bagels. Place a few slices of avocado on the cream cheese, then cover with the marinated smoked salmon, a little lamb’s lettuce, a few red onion rings and some chopped prunes.

– Top with the other half and enjoy!
